Pork shoulder is one of the best-value cuts in the shop, and this turns a big piece of it into crispy, citrusy carnitas. Tacos one night, burrito bowls the next, quesadillas after that.
13. Homemade Vegetable Fried Rice

Day-old rice, a couple of eggs and a bag of frozen peas and carrots. This is the recipe that turns leftovers into a dinner nobody realises was leftovers.

16. Cabbage and Sausage Skillet

One head of cabbage costs almost nothing and feeds four people easily. Browned smoked sausage gives it enough salt and richness that it eats like a much more expensive dinner.
17. Sheet Pan Chicken Fajitas

Chicken, three bell peppers and an onion on one sheet pan, thirty minutes start to finish. Feeds four to six for around fifteen dollars and leaves you one tray to wash.
18. Instant Pot Black Beans

Dried black beans, no soaking required, for a fraction of what the cans cost. Cook a big batch on Sunday and you have the base for tacos, bowls, soups and sides all week.
